It is indeed Hopkins, not sure but by the strictest definition I think Hopkins is the only undisputed champion in the four belt era

I'm actually pretty sure Hopkins is the only fighter to have held all four major belts in the four belt era (WBC, WBA, WBO, IBF) at any one time... Could be wrong though.
