Fantasy Olympian XV

As there has been a post on how Rugby can learn from Rowing (as a rugby playing rower, I disagree but that's besides the point) and I had my own thread on fantasy XVs, which Past or Present non-rugby player Olympians do you think would make a good XV? They can be themed as Olympians from a specific games or country if you like. I'll start off with one in just a minute-

Why does the thread title of fantasy Olympians have me thinking about Jess Ennis, Victoria Pendleton and mud wrestling?
