UFL Draft 2011
Here's a link to see all the players who have been drafted in the UFL 2011 draft: http://www.ufl-football.com/news/2011-ufl-draft
A few players of note:
Reynaldo Hill – Played in 48 games for the Titans between 2005 and 2008.
Ryan Sims – 9 year NFL veteran with time at the Chiefs and Buccaneers.
Joe Toledo – Dolphins 4th round pick in the 2006 NFL draft, but hasn’t played any games for either them or the Packers, 49ers, Chargers, Seahawks.
Adrian Peterson – Has played 106 games for the Bears.
Aundrae Allison – In two seasons with the Vikings he had 18 catches for 231 yards and 26 kickoff returns for 674 yards and a touchdown
Clint Ingram – Jaguars 3rd round pick in the 2006 NFL draft, has played in 56 games, making 46 starts.
Ian Scott – Has played in 65 NFL games for the Bears and Chargers.
Mark Herzlich – Just felt it deserved a mention that he has decided to opt for a season with the UFL, rather than wait for the lock out situation to be sorted.

There are quite a few others who have spent time on NFL teams practice squads, or have played in a few NFL games.
